Plum-and-honey sweet bread (Коржик со сливами и мёдом)

Overview

Traditional Russian sweet bread baked with ripe plums is a great treat with a cup of hot tea.

Ingredients

  • 1 teaspoonful of baking powder
  • 20 small ripe plums
  • 3 tablespoonfuls of honey
  • 3 tablespoonfuls of sour cream
  • 2.25 cups of flour
  • 3 eggs
  • 1 teaspoonful of salt
  • 0.5 lb butter, melted
  • 0.75 cup of sugar

Cooking

In a bigger bowl mix flour, sugar, baking powder, salt and melted butter to get uneven crumbs. In another bowl mix sour cream, eggs and honey, and then pour this mix into the bigger bowl. Mix well until you get homogeneous dough. Then pour it into a big rectangular baking tray, well oiled. Split plums into halves and spread them evenly on top of the dough

Do not dip! You can add a pinch of sugar to every bit of plum if the fruit is not sweet. Bake for 35-40 minutes in a preheated oven at 350F.
