Russian cuisine: Simple Berry Pie

Overview

Russian berry pie can be cooked in any place on the planet where berries and sugar are found.

Ingredients

  • Cinnamon (optional)
  • 1 teaspoonful of baking soda
  • 1 cup of sugar (or less)
  • Flour
  • 0.5 pound shortening (margarine’s a good choice) or butter
  • Berries (choice of black currant, cherries, cranberries, red bilberries, lingonberries – or the mixture of any) or berry jam
  • 3 eggs
  • 1 lemon

Cooking

Make the dough of melted shortening, eggs, sugar, baking soda, a bit of cinnamon if desired, and some flour. Then add baking soda and lemon juice. You can also grate the lemon skin and add it to the dough. Now add more flour to get bright-yellow soft dough, mix more flour in until the dough’s not sticking to your hands.

Now take a baking-pan, oil it, and spread two thirds of the dough on the bottom evenly and create dough ‘walls’ on all the sides. Put on berry jam or berries, either fresh or frozen. If you add berries themselves, you need to strew some sugar on them. Put the rest of the dough in small bits on top of the berries and bake for 30-35 minutes at 375F.

TIP:

You can add lemon zest and dried ginger to your taste.

I think you'll just add enough 'untill the dough isn't sticking to your hands'.
