Russian cuisine: Sour-cream Sponge Cake

Overview

Delicious and tender cake based on sour-cream, the basic recipe allowing for great experiments and variations.

Ingredients

  • 1 cup sour-cream
  • 1 cup sugar
  • 1 cup flour
  • 1 egg
  • 1 teaspoon baking soda

Cooking

Mix sour-cream with baking soda and set aside for 5-7 minutes. Beat the egg with sugar, mix with all the other ingredients. Bake in pre-heated oven for 25 minutes or until inserted toothpick comes out dry.

TIP:

The perfect topping is a cup of sour-cream mixed with 3/4 cup of sugar (mix, set aside till sugar melts, mix again). You can add any fillings – nuts, raisins, berries, candied fruit, orange peel etc – to the dough to create endless variations.
